Poke and Co Restaurant Dine-In Expansion

As the SENIOR BRAND DEVELOPMENT CHEF for Poke and Co, I spearheaded the brand's strategic expansion into the dine-in restaurant segment.

Concept Development:

Researched emerging food trends and customer preferences to create a unique dine-in experience that complemented the brand's existing poke bowl offerings

Designed an innovative menu featuring signature poke dishes, as well as new hot and cold entrees, sides, and desserts to cater to a wider customer base

Operations Management:

Assembled and trained a talented culinary team to execute the new dine-in concept to the highest standards

Implemented efficient workflows and inventory controls to ensure consistent product quality and minimize food waste

Closely monitored financials, optimized pricing, and managed labor costs to maintain profitability targets

Bao & Co is inspired by Asian cuisine, with a twist of flavors from different culinary traditions. Some of the signature offerings include:

I was responsible for the entire process, from conceptualizing the menu to ensuring smooth operations with the staff. This included:

  1. Menu Creation: Developing a diverse menu that showcased the best of Asian flavors while incorporating elements from other cuisines.
  2. Costing: Meticulously analyzing ingredient costs and labor to ensure the menu was both profitable and accessible to customers.
  3. Staff Training: Working closely with the team to train them on proper preparation techniques, customer service, and the story behind each unique bao creation.

We launched a Cloud Kitchen model, enabling us to extend our reach and deliver the Taqado experience across the UAE. This strategic move allowed us to serve a broader customer base while maintaining the same level of quality and attention to detail.
